The unhealthiest I’ve ever been was definitely my college days. It’s hard to eat right when you’re sleeping at 3/4 in the morning and waking up at noon—JUST in time for your first class. My friends and I would have our first meal at 5 PM and then our second at 1/2 AM….or whenever we finished practice. And when we would eat, we would want something convenient, fast, Taco Bell. Your metabolism is also very high when you’re that age—with 5-6 hours of practice a day, we felt it was OK to eat the way we were eating. I didn’t realize what I had done to my body until I came home after graduation and went to a nutritionist and they told me my habits HAD to change. I remember the nutritionist telling me that my skin was losing it’s luster because I had been neglecting daily intake of fruits and vegetables. I was proud of myself for only eating 1000 calories a day but after the nutritionist broke it down for me, I had to up my daily calorie intake to 1500 with a balanced diet of fruits, vegetables, and protein ASAP. 

At first I tried to cut carbs out of my diet completely, but being a vegetarian, that’s nearly impossible and I like carbs way too much. I switched over to eating whole-wheat pasta and whole-grain bread—I was in for a change. With the help of my mom, I learned to cook quinoa (supplement to rice), stir-fry, lettuce wraps, spinach smoothies, and so many other healthy dishes. 

When you add-in 4-5 times a week of gym time and cutting back on hookah—I can definitely say I did a complete 360 when it came to my health. 

One of the biggest challenges I face is motivating myself to go to the gym after 8 hour work days. All I want to do is lay after work...But I do have to say, my friends are huge motivators to me. Every time I get a gym snap or someone mentions “Coachella bod”—you best know, I’ll be running to the gym! Another big challenge is WATER. How does one drink 8 glasses of water a day?

Sample Daily Diet

Breakfast:

Smoothie (Blueberries, Strawberries, Spinach, Banana, Orange Juice) 

2 Eggs 

Whole Grain Toast + Jam 

Lunch:

1/2 Thai Salad 

Honey Mustard Pretzels

1/2 Butternut Squash, Cranberry, Pecan Quinoa 

Snack:

Carrots & Crackers 

Dinner: 

Whole Wheat Spaghetti with veggies

Soup/Salad

I have a pretty bad sweet tooth so I’ll definitely sneak in a brownie or candy here and there! 

Disclaimer: I do not follow this diet strictly, I think it’s 100% okay to have a slice of pizza or wings whenever your heart desires.
